  1. I am an Executive Chef and have worked in a kitchen for over 25 years. I purchased this sharpener about a month ago and so far I am very satisfied. If you read the manual, it is very easy to use. I was at first worried about taking too much metal off of my kinves. As long as you don’t over use the first stage that should not be a problem.
    It put a good edge on my knives quickly and easily. I have a 10 inch wusthof that is my main kitchen knife. I put an edge on it with stage 1 over a month ago and it has remanined very sharp since. All you have to do is run it through stage 2 ( which is just like a steel) every once and a while and it maintains it’s sharpness.
    So far I am very satisfied.

  2. We got the platinum model about three years ago, and it sharpened long-dull knives nicely. I eventually threw the receipt away. A few months ago, the blades didn’t turn anymore. I sent it Edgecraft, and asked for a quote to repair it. They sent it back about a month later, repaired at no cost. Nice! Now it sharpens again nicely, and I don’t have to landfill yet another impossible-to-repair small appliance.

  3. I love this knife sharpener! It helps keep my knives with a great edge, and since I do lots of slicing, cutting, de-boning, paring and chopping in my kitchen on a daily basis it really helps to have knives in good shape. So much easier and quicker than using the hand held sharpeners. this is a must have for a busy kitchen.
