When sharpening what angle should I set and to finish what angle should i hone .Are there any jigs that are used to honeknives.
I have just used the Model 120 for the first time and, wow, I could not believe the sharpness of the knife edge. I have no previous experience with using any sharpener but the edge was extremely sharp. I called Edgecraft at the 800 number and praised this product. I have no qualms about complaining when a product stinks. Likewise, I want highly recommend this sharpener. The instruction booklet must be read before use..
